Tangy Broccoli Salad

Ingredients:

  • 3/4 cup Hellman’s mayonnaise
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1 bunch broccoli, cut into florets (approximately 6 cups)
  • 6 slices bacon, crisply cooked, drained and crumbled
  • 1 small red onion, chopped

Mix mayonnaise, sugar and vinegar in large bowl.   Add remaining ingredients; mix lightly.  Cover.

Refrigerate at least 1 hour before serving.

Blissful Brownies

Ingredients:

  • 4 squares unsweetened baking chocolate
  • 1/3 cup canola oil
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 cups sugar
  • 8 large egg whites
  • 1 cup flour
  • 1/2 cup chopped pecans

Preheat oven to 350 degrees.  Line 13×9-inch baking pan with foil, with ends of foil extending over sides of pan.  Grease foil.

Microwave chocolate in large microwaveable bowl on HIGH for 1 minute.  Stir until chocolate is completely melted.  Add oil, applesauce and vanilla; mix well.  Stir in sugar.  Add egg whites; stir until well blended.  Add flour and pecans; mix well.  Spread batter into prepared pan.

Bake for 25 minutes or until brownies start to pull away from the sides of the pan.  Cool completely.  Remove brownies from pan.  Cut up and serve!

Chicken Pot Pie

Ingredients:

  • 2 tablespoons Italian dressing
  • 1 pound boneless, skinless chicken breasts cut into bite-size pieces
  • 2 cups frozen mixed vegetables
  • 1 can (10 3/4 ounces) condensed cream of chicken soup
  • 1/4 pound (4 ounces) cream cheese, cut up into tiny cubes
  • 1 sheet frozen puff pastry (1/2 of 17.3 ounce package), thawed
  • 1 egg, slightly beaten

Preheat oven to 400 degrees.  Heat dressing in large skillet.  Add chicken; cook and stir for 5 minutes or until cooked through.  Stir in vegetables, soup and cream cheese and stir until cream cheese is no longer lumpy.  Spoon into greased 9-inch square baking dish.

Unfold pastry sheet; place over chicken mixture.  Fold under edges of pastry; press onto top of baking dish to seal.  Brush pastry with egg.  Cut several slits in top crust to allow dish to vent.

Place dish on baking sheet.  Bake 30 minutes or until pastry is a deep golden brown.  Let stand 5 minutes before serving.

Slow-cooked Roast Beef

Ingredients:

  • Roast (any cut)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon rosemary
  • 1 teaspoon garlic
  • 1 teaspoon oregano
  • 1 teaspoon All-Season salt
  • 1 beef bullion cube

Cook the roast slowly for 24 hours.  Shred the meat and then coat with BBQ sauce.  Great for hot sandwiches for large crowd!

Bean Dip

Ingredients:

  • 1 pound hamburger meat
  • 1 can cheddar cheese soup
  • 1 can refried beans
  • 1 jar taco sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon chili powder
  • 1 teaspoon onion salt
  • 1 teaspoon liquid smoke
  • 1 cup grated cheddar cheese

Brown hamburger; drain.  Add soup, beans, taco sauce and stir over medium heat until blended.  Add spices, liquid smoke and cheese.  Stir until cheese melts.  Serve hot and serve with chips.

Can be put  in a crockpot to keep warm.
